The Mistake That's Causing Soggy Roasted Asparagus

As Dan Whalen — chef, cookbook author, and founder of The Food in My Beard — told Chowhound, buying “the thickest asparagus you can find” can help you avoid soggy asparagus.
“I find that thin asparagus is always overcooked by the time it gets cooked at all," he added. Whalen also opts to grill or broil asparagus for that mouth-watering charred look.
Since asparagus easily turns too soft, Whalen suggests cooking it for a few minutes. To find out if your asparagus is done, simply take a bite and test it out yourself.
