While homemade bread requires a labor-intensive kneading process, KitchenAid mixers with their dough hook attachments, particularly the spiral dough hook, make the process easier.
Unlike the standard C-shaped attachment, the spiral hook’s twirled design continuously presses the dough against the bottom of the mixing bowl, reducing kneading time.
Additionally, the spiral hook’s downward pushing action prevents the dough from sticking, allowing for continuous mixing until the completion of the kneading process.
The spiral hook is especially ideal for larger batches of bread, but before obtaining the attachment, ensure your mixer is compatible with it and can handle the dough quantity.
Moreover, you will need to reduce the mixing time that your recipe demands while using the spiral attachment and turn your mixer’s dial to setting 2 for optimal gluten development.
It’s also crucial to note that using the spiral hook is not ideal for the initial mixing step. It’s better to use the paddle attachment or a spatula first to mix the dough.
