To ensure you don't end up with soft, soggy lumps of tofu, you must dry out its outer layer. One of the most effective ways is to pour salted boiling water over it.
When the tofu is heated, its proteins tighten up and wring the water out of itself. The salt in water also speeds up the process by drawing some water out of the tofu's center.
You can even go further and boil your tofu in salted water for five to 10 minutes. This can cause the tofu to become firmer throughout and get a more solid texture.
No matter which method you follow, cut the tofu into pieces beforehand, as the increased surface area will make the water more effective and speed up the drying afterward.
Once the tofu has been treated, it can be laid out to dry, wrapped in towels to draw more moisture out, and even pressed to get as much water as possible.
