The Frozen Vegetable Bobby Flay Prefers Over Fresh

Chef and Food Network personality Bobby Flay prefers frozen peas to fresh. "A lot of chefs will tell you that frozen green peas sort of trump fresh peas," he said on Instagram.
"Fresh peas are wonderful, but they get starchy very, very quickly," Flay says. "So if they're not utilized almost immediately, the starch kind of grows."
In addition, green peas have a fairly short growing season, so it can be hard to get them truly fresh. That's why Flay opts for frozen peas
over fresh ones any day.
"Frozen peas are frozen at their very, very peak sweetness," he explains. "Green peas are one of those things where I have to say, 90% of the
time, I like frozen peas better."
