The Flavorful Difference Between Prime Rib And Ribeye

NEWS

By HILARY WHEELAN REMLEY
Prime rib and ribeye steak cuts are from the same part of the cow. Prime rib is a larger, less processed cut, while ribeye is sliced into smaller pieces.
Their key difference is preparation; ribeye steaks are cooked after being cut from the larger rib primal while prime rib steaks are removed from the larger cut after cooking.
These larger cuts of meat aren't cooked like a steak; instead,
they are roasted at a lower temperature over a longer period.
Prime rib is best served with a pink center as overcooking it causes it to be tough. However, ribeye can be cooked to your preferred doneness.
If you prefer a well-done steak, pick a ribeye with heavy marbling, as the higher fat content will help keep the steak juicy and soft.
