Celery stalks and juice

The Clever Storage Trick That Revives Limp Celery

Celery is prone to drying out, as it loses moisture with age, but the key to reviving a celery with dry and limp stalks is surprisingly simple.
All you need is a bit of water.
Either cut the celery's bottoms off and submerge the stalks in cold water, or if you don't have a large enough container, place the stalks upright in a large glass or vase.
Next, put it in the fridge overnight. This will begin the capillary action, where the water is absorbed into thin tube-like structures in the stalk and moved up throughout the plant.
As the water is distributed into the plant's cells through osmosis, they swell and become firmer, reviving the plant's structural stability
and giving it back its crispness.
