Sausage links are great to use in a breakfast sandwich, as they come pre-cooked and only need a quick pan sear. Unfortunately, their shape is a bit cumbersome to fit in a sandwich.
Luckily, you can easily remedy this by butterflying your sausage links. This involves slicing them long-wise down the center, then pushing the sliced edges apart so it lies flat.
This technique makes it easier to build and eat your sandwich. In addition, butterflied sausages cook through faster and get a crispier texture and savory caramelization.
To butterfly your sausage, use the tip of a very sharp knife to score each sausage lengthwise down the center, slicing into the casing and meat, but not all the way through.
While the sausage fries, prep the rest of your sandwich. You can also fry biscuits or croissants lightly in your sausage grease to use as buns if you time things correctly.
