There's one particular mayonnaise that Southern chefs have been swearing by for years: Greenville, South Carolina-
based Duke's mayonnaise.
Chef Sean Brock said of Duke’s, "When you make your first tomato sandwich with it, that flavor is locked into your brain, and every time [...] you're chasing that flavor."
Celebrity chef Alton Brown mentioned Duke's in his mayonnaise recipe, stating, "This Carolina classic has plenty of vinegar in it, and that gives it the zing I crave."
While Duke's uses many of the same ingredients as other brands, the slightly higher ratio of vinegar adds that zing. It is also free of sugars and artificial sweeteners.
