Chowhound assembled a detailed ranking of nine all-purpose flour brands and, using consumer reviews and insights from professionals, found that Pillsbury was the weakest link.
Protein helps to form the structure of your bake. However, Pillsbury's all-purpose flour has a low protein percentage, which makes it act more like cake flour.
While it works well in cakes, if you use Pillsbury’s flour in a recipe that calls for all-purpose, your perfectly constructed dough or batter will turn out too loose and liquid-y.
