Everyone knows you need garlic to make garlic bread, but the key to the best garlic bread is to use garlic powder that has been activated and woken up by rehydrating it.
Simply sprinkle the powder into
a bowl and mix it with room temperature water to make a paste that you can brush straight onto toast for some delicious garlic bread.
The flavor of rehydrated garlic powder is more intense and more closely matches fresh garlic. It also has stronger roasted notes that deepen the flavor profile of the garlic bread.
Alliin and alliinase compounds in fresh garlic create allicin, which gives garlic its intense flavor, but in garlic powder, the dehydration process deactivates the two compounds.
Rehydrating garlic powder reactivates alliin and alliinase, thereby creating that third compound, allicin, which re-infuses your dehydrated garlic powder with intense flavor.
