The Beef Cut With An Undeserved Reputation For Being 'Bad'

If you're in the market for an affordable cut of beef that still packs flavor, there's one less popular cut that might just outdo all the other cheaper cuts: beef eye of round.
The cut comes from the center of a cow's round section at its rump, a part that is worked out a lot, so it's not really tender. It's also a very lean cut with little marbling.
However, while common beef wisdom dictates that more marbling equals more flavor, the eye of round bucks this assumption by offering a robust, meaty taste.
Depending on the location and the cut's size, it can cost as little as $7 per pound and roughly $7 to $11 in a grocery store, which is much more affordable than other cheaper cuts.
