While it's a good idea to invest in quality kitchen equipment, the Momofuku group founder David Chang suggested in his Instagram video to go cheap when buying a paring knife.
His favorite models are anything with a plastic handle that costs less than $10, like the one made by Victorinox. "There's no reason to buy a fancy paring knife," he stressed.
He added that a cheap blade like those made by Victorinox, Wüsthof, and others is "one of the most indispensable tools in a professional kitchen." It's also what he has at home.
The argument for cheap paring knives boils down to utility. You need a thin blade that can be frequently sharpened, but it won't leave you heartbroken if the tip snaps off.
