Eggs' natural fat helps carry and present flavor effectively, and they're also fairly neutral in taste, so they won't overshadow the truffle essence, helping it take center stage.
To make your scrambled eggs truly stand out, prepare them as usual, plate them, and shave your truffle over the top. You won't need more than about half an ounce per three eggs.
You can use a truffle shaver or a vegetable peeler for shaving your truffles. Both black and white truffles will do the job, so the variety you use is your choice.
