While the California-based chain In-N-Out is beloved by many people for its fresh, premium burgers, its fries aren't so well-regarded, which may be due to how they are prepared.
At In-N-Out, fries are julienned and fried right in front of you. Because the spuds are freshly cut, they can't release excess moisture, resulting in soggy and texture-less fries.
For crispier fries, many customers order their fries well-done, earning them extra time in the fryer, but this doesn't fully repair the damage done by the rushed prep process.
