Considering the health risks of added sugar, many people avoid using it in their homemade tomato sauce. However, chefs like Bobby Flay often advocate for adding just a pinch of it.
The traditional thinking behind adding sugar to tomato sauce is based on the idea that the sugar’s sweetness will help balance out the natural acidity of tomatoes.
Since the acidity levels can vary significantly from one tomato plant to the next, it’s impossible to set a firm rule regarding whether or not to add sugar to homemade sauce.
Fortunately, canned tomatoes have regulated pH levels, reducing the need for sugar. However, it’s best to make your sauce without sugar, then taste it, and add a pinch if required.
