When cooking steak at home, it’s crucial to select the right steak cut to begin with. Out of all the candidates for homemade preparation, the worst option is round steak.
Derived from a part of the cow just above the hind legs, the round is a region that's muscular and used often by the cow. As a result, the region is low on fat marbling and flavor.
If you cook it over high heat, the steak will be tough and tasteless. You can prepare this cut well with other techniques, but it is not good for a basic steak night.
This cut of steak is actually meant for slow-cooking. With low heat and patience, the interior tissues will break down, melting into a result that's more tender.
