While powdered sugar is often set aside for icing, whipped cream, or dusting on top of sweet treats, you might want to consider using it in place of granulated sugar for cookies.
Powdered sugar clings to other ingredients like butter in a different manner than granulated, and it quickly spreads out and melts in less time than granulated sugar does.
This quick melt time leaves cookies with a light, cakey, shortbread texture. On the other hand, granulated sugar takes longer to melt, creating a chewier cookie with more crunch.
