Ignore This Time-Consuming Step When Grilling Steak

Although most people believe that letting steak rest outside the fridge and come to room temperature before cooking is a crucial step, that’s not actually the case.
The common belief is that room-temperature steak cooks more evenly. Many recipes suggest letting the steak rest for 20-30 minutes, but that doesn't raise its core temperature much.
Hence, a rested and a straight-out-the-fridge steak will cook the same. However, once your steak is out of the fridge, you must pat it totally dry with paper towels before cooking.
After a stint in the fridge, a steak can feel wet due to its natural juices and probable fridge condensation. If you grill the steak without removing that moisture, it won’t brown.
