Flank steak is often cheaper and has a hearty, strong beefy flavor. However, if you aren’t careful, it can easily become tough and unpleasantly chewy once cooked.
Flank is a thinner cut, which makes it easier to overcook, so be vigilant as you grill it. It helps to marinate it beforehand and cook it at a lower temperature or for less time.
You can either cook thin steaks, like flank, on high heat for three to five minutes on each side or grill them for longer at a lower temperature before they’re fully cooked.
Since a steak will continue to cook even after you remove it from the heat, cook your flank steak to five or ten degrees below the ideal temperature to prevent overcooking it.
