How Jacques Pépin Makes Savory Pancakes Using Stale Bread

French chef Jacques Pépin recently took to TikTok to share his technique for making savory pancakes out of stale bread. His recipe uses the same methodology as French toast.

To replicate his recipe, soak one cup of small cubes of stale bread in ¼ cup of milk. As the bread soaks, dice up 2 to 3 tablespoons of onions and fresh parsley or any other herb.

Add the soaked bread cubes, the diced onions and herbs, and some salt and pepper to a bowl and crush the mixture by hand. You may need to add some more milk if the bread is dry.

Then, add an egg to the bowl and mix. Once done, heat some olive or peanut oil in a pan, scoop the final mixture into it, and press the dollops down a little to form the pancakes.

Cook them for two minutes on each side until golden brown. A slice of bread or two will yield multiple pancakes — Pépin was able to make three pancakes out of just one slice.
