As delicious as spicy tuna rolls may be, one of the key ingredients is tuna scrape — the meat scraped from the skeleton of the tuna rather than the freshest, most nutritious meat.
Not only is tuna scrape not as flavorful, but it has been linked to some pretty serious health risks. In 2012, there was an outbreak of Salmonella related to tuna scrape.
Tuna should only be added to sushi when it’s safe and of top quality, which is not always the case with spicy tuna rolls. Restaurants often get this type of tuna shipped frozen.
The tuna backmeat is also ground, a less-than-desirable form since ground meat presents more risk of contamination. You should only eat sushi- or sashimi-grade raw tuna.
