In a discussion with PhilStar Global, chef Gordon Ramsay sang the praises of sisig, a classic Filipino dish also beloved by late chef Anthony Bourdain.
Sisig is a Filipino dish made of boiled minced pork fried with onions and peppers. Ramsay described it as "Absolutely bang on, it was delicious! And I just swallowed it!"
Anthony Bourdain also loved the dish, telling CNN Philippines, "I think sisig is perfectly positioned to win the hearts and minds of the world as a whole."
Sisig can be a breakfast or dinner meal because of its casual nature. The food is meant to pair with beer, and it's often eaten to help with hangover symptoms.
The dish uses pig stomach, snout, pork cheeks, and ears, which are all cooked together for a special taste and texture. The flavor profile is bitter, sour, and savory.
