A gluten-free twist on the famously gluten-loaded croissant is trending on TikTok, and it involves swapping in layers of paper-thin rice sheets for pastry sheets made of flour.
Typical croissants are famously labor-intensive to make, requiring steps like kneading, rolling out, and brushing on butter, and gluten-free flour alternatives can be finicky.
However, using rice paper, you'll essentially be skipping the entire pastry part of making croissants, and skipping over tricky and complex gluten-free ingredients.
To make croissants using rice paper, make a mixture of eggs, milk, butter, and optionally, some cinnamon. Then, dip each sheet in the liquid, position, layer, slice, and roll up.
Lastly, bake in the oven until golden, crispy and flaky. Having a mild flavor, rice paper sheets can easily take on the role of baked goods when dunked in batter and rolled up.
