Fast And Easy Crispy Chicken Is One Clever Condiment Trick Away

Coating your chicken in a few carefully selected condiments can lock in moisture, keeping everything juicy and acting as a canvas to easily create tons of flavor profiles.
Chowhound prefers using mayo and thinly sliced, boneless, skinless chicken breasts. The thinner chicken cooks quicker, giving the meat less time to dry out in the oven.
Mayo provides a blank base to make super spicy, extra cheesy, or even a little fruity. However, you can also use any condiment that will adhere to breadcrumbs.
The condiment mimics the results of a flour, egg, and starch station yet takes less time. You'll need about 2 cups of breadcrumbs per pound of chicken breast.
Plop a few spoonfuls of mayo into one dish and the breadcrumbs in another. Dip each piece of chicken in the mayo, slap it in the panko, and add it to the sheet to bake.
