Dining omakase-style involves sitting at a chef’s counter as they prepare dishes of their choosing. It is a leisurely meal that can have between nine and 15 courses.
Guests will be eating sushi and sashimi dishes for the bulk of their meal, but the chef might add other menu items. Eating omakase-style requires at least two or three hours.
It might be a curated meal to start, but if the guests’ demeanor changes, the chef will adjust the plans. Prices for omakase-style meals can be as high as $500 per person.
You have to trust the chef will select items that appeal to you, so it’s unwise to ask for substitutions. You should dress for the occasion as if you’re meeting a celebrity chef.
