Costco's Steak Tenderizing Process Comes At A Risk

Costco uses a process called mechanical tenderization to soften its steaks. This method uses needles or small blades to pierce the flesh of a steak.
Mechanical tenderization carries a risk of foodborne illness. The needles used to pierce the meat can also carry bacteria from the surface into the center of your steak.
This is risky with steak, as many diners prefer steaks to be cooked either rare or medium rare at temperatures not high enough to kill dangerous pathogens such as E.coli.
