If you use a cast iron pan regularly, it will eventually develop those browned, caked-on bits technically called the fond. To remove them with ease, caramelize onions in the pan.
As the onion slices cook for about 50 minutes, they pick up the bits
of fond, removing them from
your pan's surface and leaving
it glassy and good as new.
Meanwhile, they also pick up flavors from the bits of fond, which have the capacity to infuse recipes like stocks and sauces with big flavor, leaving you with rich sweet onions.
