For Jews observing Passover, this decadent cake, crafted from melted chocolate and bittersweet coffee infused with matzo is the perfect dessert for traditional seder meals.

Start by creating the frosting. Microwave 1 ¾ cups of chopped dark chocolate until fully melted, then fold in 1 ¼ cups of heavy cream until you have a smooth mixture.

Next, beat ¾ cup heavy cream into soft peaks, and combine with your frosting. For the cake, dunk five sheets of matzo, one at a time, into a cup of coffee poured into a flat dish.

Let each sheet fully absorb the coffee. Then, layer a sheet of matzo before coating it with a dollop of the chocolate cream, continuing this alternating pattern with all the sheets.

Lastly, top your cake with chocolate frosting before covering it with a lid or plastic wrap — so the layers retain their moisture — and place the cake in the fridge overnight.
