Bobby Flay Can't Stand These Fancy Burger Upgrades

In an interview with Bon Appétit, Bobby Flay confirmed that his two biggest pet peeves for cooking burgers are over-seasoning the beef patties and using overly fanciful buns.
Flay also warned against using other seasonings, such as garlic, onion powder, or spices, arguing, "That's meatloaf. I hate that." Instead, he focuses on the beef patty's taste.
The Food Network star advised against focusing on the quality of the beef. Instead, he emphasized the fat content, saying, "You want 20 percent. Any less and it'll be too dry."
When it comes to bread, Flay prefers simpler, softer, and seeded bread rather than flashier buns, as they are better able to absorb juices and hold the fillings in place.
Flay isn't alone in this belief. Celebrity chef Anthony Bourdain once wrote on X, formerly known as Twitter, "No hamburger has ever been improved by a brioche bun."
