Eggplant

Eggplant is sometimes used as a meat alternative, but while delicious, it is naturally low in calories and protein. This means it is not substantial as an alternative.

Beets

While beetroot juice can be effective in a plant-based burger to help it “bleed” like eggplant, it lacks protein and won’t replicate a meaty flavor or texture.

Nut Cutlet

A nut cutlet is a patty formed out of a variety of nuts. Though great for heart health and providing protein, shop-bought nut cutlets are often dry and disappointing.

TVP

Textured vegetable protein, or TVP, is a protein made from soy flour. Unfortunately, TVP is very bland, and the texture can be mushy if not cooked right.

Silken Tofu

Tofu comes in many forms, and the silken variety is not the one to use in place of meat, as it has a pudding-like texture. Instead, go for firm or super-firm tofu.
