Alton Brown Swears By One Extra Ingredient For Fabulous Scrambled Eggs

Whether you like your scrambled eggs plain or with extra ingredients, served by itself or on toast, chef Alton Brown says you only need one teaspoon of mayo to make it creamier.
Sharing this tip in his 2016 book, "Everyday Cook," Brown notes that scrambled eggs and mayo are both emulsified foods, so the texture of mayo only enhances that of scrambled eggs.
Since mayo is made from eggs, it won’t affect the scrambled eggs’ flavor. All you have to do is mix a teaspoon each of mayo and water and add it to the eggs before cooking.
