Air Fryer 'Sun-Dried' Tomatoes Bring The Taste Of Italy To Your Kitchen

Sun-dried tomatoes are made by laying tomatoes out on rooftops to bake and lose moisture for days under the southern Italian sun, but air frying can deliver similar results faster.
Although larger plum varieties like Roma or San Marzano tomatoes are more traditional, smaller types like cherry or grape are perfect for air frying, and even beefsteaks work well.
To start, rinse, dry, and halve or slice your tomatoes before tossing them in some sea salt, olive oil, and herbs. Air fry them cut-side up for about 75 minutes at 240 degrees F.
Be sure to pause halfway through the cooking process and gently squish the tomatoes with a fork or spatula to squeeze out any remaining liquid. Let them cool down before storing.
The end product will have a chewy, leather-like texture and a concentrated and sweetly tangy flavor. Store them in the fridge in olive oil or an airtight container for a few weeks.
