Though it might seem unusual, adding baking soda to your coffee can significantly enhance its flavor. This is particularly effective for cheaper coffees or very light roasts.
Baking soda, known as sodium bicarbonate, is a complex chemical compound. With a pH level of 8, it is alkaline, whereas coffee has a pH level of 4 or 5, depending on the roast.
Therefore, combining the acidic beverage with baking soda will raise your coffee's pH levels, lowering its acidity and mellowing its intensity as the two combine.
To try out this fix for overly bitter coffee, you only need to add a small pinch of baking soda, around ¼ to ½ teaspoon, to your coffee grounds before brewing your pot as usual.
