A Little Cornstarch Makes Roasted Vegetables Unbelievably Crispy

Cornstarch is great at absorbing excess water and has a high concentration of amylose, both of which aid in crisping up your vegetables during the roasting process.

Start by washing your vegetables and patting them dry. This will help remove extra moisture and ensure the cornstarch sticks evenly.

Then, either mix cornstarch and water and stir vigorously until you achieve a batter-like consistency, or mix cornstarch with vegetable oil.

Once you have your mixture, toss in your vegetables and make sure they are evenly coated. From there, follow your recipe as usual.
