  • 1 lb of ground turkey, 1 can of black beans, 1 can of Rotel tomatoes, Cumin, Chili powder, salt and pepper to taste.
  • Whole wheat tortilla chips and cheddar cheese for the top.

Turkey Nachos

This is one of the fastest dinner’s you will ever make yourself. Even if you don’t think you have time, you have the time. Trust me.

Note from CHOW: When the CHOW Test Kitchen tested this recipe we used 1 (15 oz) can black beans, 1 (15 oz) can Rotel tomatoes, 1/2 teaspoon ground cumin, 1 teaspoon chili powder, 12 oz shredded cheese, and 14 oz chips.
We used a large platter, spread out all of the chips, topped them with cheese, and warmed them up. We topped that with all of the turkey mixture and served it family style with sour cream on top (you can use Greek yogurt instead and add chopped cilantro, avocado, and even salsa if you want!).

Instructions

  1. 1Brown the ground turkey in a couple TBSP of olive oil until throughly cooked. Add Cumin and Chili powder, salt and pepper to taste while browning. After the meat is cooked, I use a paper towel to blot out all the oil, then add the Rotel tomatoes and black beans until warmed through.
  2. 2Put a serving of whole wheat tortilla chips on a plate and some cheddar cheese on top of them and warm this up in the microwave for 25 to 35 seconds until the cheese is melted, then put about 1/4 to 1/2 cup of the ground turkey mixture on top of the chips and eat. That’s it!! They’re amazing! Add sour cream if you’re splurging.
