Turkey Meatballs and Spaghetti Squash
My husband and I have joined the “eating healthy” band wagon!! Finally:) I discovered spaghetti squash at our local farmers market and decided to give it a shot. It was the BOMB!!
Turkey meatballs and marinara make an easy weekday dinner for us!! We normally have leftovers for lunch too!!
- 1 large spaghetti squash
- 1 lb ground turkey
- 4 cloves garlic
- 2 stems green onion
- 2 cups spinach
- 1/2 cup panko
- 1 egg
- 1 jar favorite spaghetti squash
- 1 pinch pepper and parsley
- 1/2 cup parmesan (seperated)
1Preheat oven to 400 degrees. Pierce Spaghetti Squash evenly in about 12 places. Place in microwave for about 15 minutes. I normally roll mine over half way through, just to make sure it heats evenly. Take out of microwave and let rest while you work on the meatballs.
2Place thawed ground turkey, egg, panko, chopped green onion, smashed/chopped garlic, and chopped spinach, parmesan, and seasonings into a bowl and mix well. If it is still runny, add a little more panko.
3Form turkey mix into 1.5 inch balls and place evenly on a baking dish. Place in oven cook for about 15-20 minutes turning them over once.
4While meatballs are cooking cut squash in half long ways. (IT WILL BE HOTT!) Remove seeds, and shred with fork long ways so it forms spaghetti like strands. Place in pan and top with remaining parmesan. I normally have a little green onion left too and I just put on top. Warm up spaghetti sauce and put meatballs in and serve!!!
