Sweet Potato Sorbet
Thanksgiving and Christmas are during the summer here and this is a great way to enjoy sweet potatoes in a refreshing new light.
- 1 pound yellow sweet potatoes
- frozen orange juice concentrate enough to make soft puree
- pinch of salt
- brown sugar to taste or maple syrup is great if you can get it.
- embellishments to taste... nutmeg is great
1boil sweet potatoes in their skins until soft.
cool and peel
1combine sweet potatoes, sugar or syrup and frozen orange juice conctrate in a food processor fitted with a steel blade
2I add a bit of salt.
3You can embellish all you like. nutmeg is fantastic.
4freeze puree until it is almost frozen, but not hard
5serve with sweetened whip cream and chopped candied pecans
