  • 1/2 cup finely chopped blanched almonds
  • 1/2 cup macaroon crumbs
  • 1/4 cup brown sugar
  • 1 teaspoon finely grated orange rind
  • 6 large pears, peeled
  • 1/3 cup sherry, Marsala wine or peach nectar

Stuffed Pears

Elegant enough for the first course of a dinner party — but easy enough for a weeknight side dish — these roasted pears are healthy and tasty.

Instructions

  1. 1Mix almonds, macaroon crumbs, 2 tablespoons brown sugar and orange rind. Cut pears in half lengthwise and remove seeds. Lightly fill each half with crumb mixture. Put 2 halves together and secure with toothpicks. Arrange in 8-inch square dish; sprinkle with remaining sugar and sherry.
  2. 2Cover with wax paper. Microwave with 650 watts for 4 minutes; rotate dish 1/2 turn. Microwave with 650 watts for 3 to 5 minutes more.
