Ingredients
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 1 green bell pepper, seeded & diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 (14.5-ounce) can fire roasted diced tomatoes
  • 1 (14.5-ounce) can crushed tomatoes
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ cup beef broth
  • 2 jalapeños, seeded and diced
  • ½ (7-ounce) can chipotles in adobo sauce
Optional Ingredients
  • Sour cream
  • Shredded cheddar cheese
  • Sliced jalapeños
  • Fresh cilantro
  • Tortilla chips
Directions
  1. Heat oil in a large pan over medium-high heat.
  2. Add onion and green pepper; cook 5 to 6 minutes, stirring occasionally, until softened.
  3. Add garlic and cook an additional 30 seconds.
  4. Transfer to a 5-quart slow cooker.
  5. Add ground beef to the pan and cook until no longer pink, 4 to 5 minutes. Drain excess fat.
  6. Transfer beef to the slow cooker.
  7. Add remaining ingredients to slow cooker and stir to combine.
  8. Cover and cook on the high setting for 3 to 4 hours, or low setting 5 to 6 hours.
  9. Serve hot with sour cream, shredded cheddar cheese, sliced jalapeños, fresh cilantro, and/or tortilla chips, as desired.
