Rad Roasted Goobers
My Rad Roasted Goobers are well browned to dark/very dark roasted, aka parched, peanuts, and inhanced with an infusion of roasted whole coffee beans. They are roasted/parched in small batches in a toaster oven. Roasting time(s) to bring out the oil of the peanuts, coffee beans, and the small cavity of the toaster oven, as opposed to a conventional oven, is what I believe gives these peanuts a flavor punch (who needs all that salt?) that you won’t find in any store bought roasted peanuts.

1Preheat toaster oven to 300 degrees. Line the bottom of a shallow baking, like most toaster ovens come with, with aluminum foil. and lay down about 2/3 cup of whole roasted coffee beans, preferably Columbian Supremo, or other dark roast variety like French Roast or Espresso. Place in the shell raw peanuts, about 3 good handfuls, over the coffee beans. Place in the toaster oven. Leave in the toaster oven for about 35 minuets, removing and tossing peanut and coffee beans around once midway through the roasting/parching process. Remove from oven and let cool for about 5 to 10 minuets before attempting to eat.
2Roasting/parching temperature & times may vary due to toaster oven brands and sizes. Adjust as necessary so that peanuts, the actual nuts themselves, come out with a very well browned/dark/very dark roasted look to them.
