Ingredients (8)

  • 1 Spanish Onion
  • 3 stalks of celery
  • 10 left over baked potatoes
  • 1/2 lbButter
  • 1 lb bacon cooked
  • 1 galCream
  • 1cup Flour
  • Spices: salt,white pepper, dill, garlic,

A simple but elegant way to use your left over baked potatoes


  1. 1Chop your onions and celery fine and sautee in butter
  2. 2Peel potatoes and dice save skins
  3. 3Add potatoes to butter and sautee turning so not to scorch
  4. 4add flour and stir
  5. 5Add cream to thicken
  6. 6Add bacon and spices and let simmer
  7. 7To serve cut skins in small cubes, fry them and put on top of soup with spoon of sour cream and chives.
