Ingredients (7)

  • 0% Fat Fage Yogurt - enought to cover chicken in a zip lock bag
  • 1/2 cup toasted pecans
  • 1 cup "carb quick" or 1 cup flour (Carb Quick is a low carb flour alternative)
  • leg and thigh chicken pieces
  • 1/2 tsp paprika
  • 1/2 tsp salt and pepper
  • good quality olive oil cooking spray

Pecan Crusted Oven Baked Chicken

I’ve been experimenting with low carb chicken options over the past 6 months —and this one really works well!

Instructions

  1. 1Place chicken pieces in a zip lock bag and cover with your Fage Yogurt. Put in the refrigerator for 1 hour.
  2. 2Pre-heat oven to 400 degrees
  3. 3Combine all the dry ingredients in a zip lock bag.
  4. 4Remove a piece of chicken from the yogurt bag and allow most of the yogurt to drain off before placing in the dry ingredients bag.
  5. 5Toss in bag and place each individual piece of chicken on a sheet pan that has been covered with a sheet of parchment paper and sprayed with a good quality olive oil spray.
  6. 6Bake for 30 minutes and then turn over the pieces and bake for another 30 minutes.
    Remove and allow to sit for 3 minutes before serving.
