1Preheat oven to 200F and plug in your waffle iron.
2Mix all dry ingredients (flour, pecan meal, sugar, baking powder, baking soda, salt) together in a bowl.
3In a separate bowl, whisk together your Blue Moon, orange juice, orange zest, butter, and egg yolks (reserve egg whites).
4Make a well in the center of your dry ingredients and pour in the wet. Mix in your wet ingredients.
5Whip your egg whites until soft peaks have formed and then fold into your batter. Now cook the waffles (: Place any that are done before you’re ready into the preheated oven.
6While your waffles are cooking, put your 1 cup sugar, Karo syrup, and water into a cold pan and raise to medium-high heat, stirring occasionally. Allow to caramelize to desired color and then remove from heat, add in your remaining Blue Moon and whole pecans and stir. Pour your sauce over the waffles and serve! (:
