Ingredients (8)

  • toast (one slice)
  • fried egg (one egg fried hard)
  • anchovies (approximately 5)
  • pitted green olives (half cup)
  • garlic (1 tsp)
  • sriracha (to taste)
  • green beans (six green beans - steamed unless canned)
  • Potato Chips (Kettle brand salt & fresh ground pepper)

I love Nicoise Salad and I love sandwiches. I am also lazy so this creation works for me.


  1. 1Roughly chop pitted green olives and garlic.
  2. 2Toast your bread.
  3. 3Fry egg hard.
  4. 4Spread chopped pitted green olives and garlic on toast.
  5. 5Lay fried egg over green olives and garlic mixture.
  6. 6Arrange anchovies and green beans atop fried egg.
  7. 7Crush potato chips and sprinkle over top of po’ boy and cover with sriracha.
