Ingredients (5)

  • 1 cup Sugar
  • 2 Eggs
  • 1 Lemon - juice and zest
  • 1/4 cup Butter - melted
  • 1 cup Coconut

One of my mother’s holiday recipes, it’s not Christmas without these tarts.

It assumes you’ve already made tart shells or bought them. They don’t need to be baked blind first.

Instructions

  1. 1Preheat oven to 400
  2. 2Beat all ingredients together
  3. 3Fill tart shells to just under the brim.
  4. 4Bake for 12 minutes or until nicely browned.
