La Paloma Divorcio (divorce)

I used to travel on business to the Mexican border regularly. Clients introduced me to a drink called a “La Paloma Divorcio” (divorce). The drink greatly resembles a Margarita but is easily quick to drink…. which may be a bad thing in the morning. Its also a fun “make your own at the table” kind of drink where all the ingredients are served separately and you mix it yourself. Hence the name ‘divorcio or divorce’.

Instructions

  1. 1Salt the rim of the glass and fill with ice
  2. 2This is a very important step and really makes the drink special. Mexicans call it “burning the ice”. The effect is the ice will pit which makes it pleasingly chewable. Dust the ice in the glass lightly or to taste with salt and let it sit for a minute or two to “burn the ice”
  3. 3With the ice well pitted, pour half of the jigger of the lime juice in the glass and slosh it around smartly.
  4. 4Pour in some or all of the Tequila from the jigger
  5. 5Splash in some of the Squirt and stir
  6. 6Your drink is now ready to enjoy but what makes it even more fun is that the guest can splash in any amount of the remaining ingredients until they get it just how they want it. WARNING this drink goes down way too fast.
