Huevos rancheros is delicious breakfast, lunch, brunch or even dinner meal. The flavor of the corn tortillas marries so well with the ranchero sauce, the cheese and the eggs. I am the producer of Larry’s Southwestern Ranchero Sauce and I think my all-natural, gluten-free and vegetarian sauce is the best. But if you have one you like better, go for it!
- 1 16 oz jar Larry's Southwestern Ranchero Sauce
- Eight corn tortillas
- Eight eggs
- 1/2 to 3/4 cup shredded Monterrey Jack or cheddar cheese
- 2 tablespoons oil for frying the eggs in
1Warm the ranchero sauce until it is hot on the stove on in the microwave.
2Warm the corn tortillas on the stove or in the microwave and place two tortillas slightly overlapping on each plate.
3Fry the eggs in the oil until over easy or however you like them.
4Place two eggs on the tortillas on each plate, cover with ranchero sauce and sprinkle with cheese. Serve right away.
