Grain-Free Cauliflower Fried Rice
Who doesn’t love a big bowl of fried rice? Unfortunately, the traditional fried rice recipe can be high in sodium and saturated with greasy cooking oils, making it a far from healthy dinner option. If saying no to fat-filled take out, and yes to adding more vegetables into your diet, is on your list of cooking priorities, this is the recipe for you. Cauliflower Rice is a popular Paleo alternative to carb-heavy grains, and serves as a great vehicle to carry the “fried rice” flavors of soy (in this case, coconut aminos) and nitrate-free bacon. This vegetable rich dish is so filling and flavorful, you won’t even miss the rice. Plus, fewer carbs means fewer calories, which means guilt-free eating.

- 1 head of cauliflower
- 3 slices of bacon
- 2 egg whites and 1 egg
- 1 small onion, finely diced
- 1 carrot, finely diced
- 1 red pepper, finely diced
- 1 cup broccoli florets, finely chopped
- 1 tablespoon coconut aminos (paleo substitute for soy sauce)
- 1/4 teaspoon fish sauce
- 1 tablespoon ghee (or other oil of choice)
- Salt and pepper to taste
1Chop cauliflower into florets and pulverize in a food processor until it resembles “rice”.
2Heat a large skillet on medium heat. Add ghee and cauliflower; cook for 5 minutes.
3Add remaining vegetables, and cook until soft, another 7-10 minutes.
4While cauliflower is cooking, heat a separate skillet on medium heat, and add bacon and eggs. When they are done, set aside and dice.
5When cauliflower and vegetables are done cooking, add coconut aminos and fish sauce.
6Taste and adjust seasonings accordingly.
7Add bacon and eggs. Stir until combined. Then, dig in!
