Easy Drop Biscuits with Mayonnaise

These easy drop biscuits have a not-so-secret ingredient: mayonnaise. It’s not so strange when you think about it; mayo is just eggs and oil, after all. It combines with self-rising flour and milk for the easiest biscuits you’ll ever make—a true three-ingredient recipe, though you can add mix-ins as you please. Shredded cheddar, garlic powder, and thyme are a delicious combo, but experiment with what you have or like best.

Serve these with stew, soup, chili, fried or roasted chicken, or anything else you make for dinner. Make them plainer and they’re also good for breakfast with butter and jam (or sausage and gravy), or used in a shortcake-style dessert. Note: If you don’t have self-rising flour in the pantry, just mix 2 cups all-purpose flour, 3 teaspoons baking powder, and 1/4 teaspoon salt together in a bowl and whisk until fully blended.

  1. 1Preheat oven to 400°F and grease a baking sheet.
  2. 2Combine flour, mayonnaise, and milk in a medium bowl and stir until incorporated.
  3. 3Add cheese, thyme, and garlic powder and stir just to combine.
  4. 4Drop spoonfuls of the mixture on the greased baking sheet about 1-2 inches apart.
