Easy Cheese Grits for Fish & Grits
This is a healthy interpretation of a Southern classic, fish and grits that I did for TheKitchenHotline.com. I’ll post the healthy fried fish (pictured) under breakfast/brunches.
The evaporated milk will make these some of the creamiest grits you’ve ever had without adding fat.
Replace the cheese in the recipe with more pungent cheeses like pecorino romano or smoked cheddar.
- 1¼ cup Water
- 1 cup fat free evaporated milk
- ½ cup quick grits
- 4 oz Velveeta or similar cheese-food
- Taste salt and pepper
1In a saucepan add grits to boiling water. Reduce the heat to medium-low and add the evaporated milk. Bring to a simmer, cover, cook 13 minutes.
2Add the cheese and season. Continue cooking until cheese has melted and grits are tender.
